Day 3

Today, I slept until 12 or so. Unlike the past two days, the anxiety was at last decreasing, and therefore, I was STARVING! No more of this foolish only eating a banana all day. It was time for “un caffe e un panino!” [And blessed internet access at Mood Cafe….thank you baby jesus!]. I caught up on emails and facebook, chatted briefly with Filippo and (online guy #3) Gabriele, and set up a possible date with Filippo for tomorrow.

It has rained steadily for the past two days, but I don’t mind. It’s as though the slight melancholiness is helping wash away the cobwebs of my brain and I feel more clear-headed than in recent memory. Tonight, Angela cooked pasta and made a ridiculously good dessert with ricotta cheese, chocolate, and coconut flakes. Mmmm… I am still wide awake though at 11pm, thanks jetlag!!

Choco-Coco Balls
ricotta

Ricotta Cheese
Melted bittersweet chocolate (melt in a double boiler of course)
Coconut flakes (or another topping you like, such as chocolate flakes, powdered sugar, nuts, etc.)

Mix the ricotta cheese with the chocolate until you have a moderately firm dough-like texture. Roll into balls and roll in your topping. Chill in fridge for at least 4 hours. Attempt to not eat more than 20 of them at a time please.
